My favorite steel in banquet kitchen

I found with trail & error that more aggresive steels were not good for my carbon Masamoto's.Steels are for honing edges.The 12" combination fine/polish lite measured strokes maintained my edges between trips to my sharpening stone.
Pros: Durable, 12" good for 240 gyuto
